Canned Soup Fix
All of this is to say that although I am craving a good, hot meal, I am in no mood to cook. I was supposed to have dinner at the beach with a friend, but we moved it to lunch tomorrow. So, I looked in my pantry and came up with a can of chicken noodle soup. Granted, it is the expensive kind and low sodium to boot – but canned soup just didn’t sound nice.
I let my eyes flick over next to the soup can and saw a little can of green chilies I didn’t use the last time I made chicken enchiladas. So, I opened the soup and the chilies and put them in a saucepan together. Wow! It was honestly fantastic. It was a quick, easy, inexpensive canned soup fix and it made all of the difference in the world.
