When I Feel Old Fashioned

Sometimes there is nothing better than an old fashioned one-egg cake. It’s simple, quick, and delicious. Everyone in our family has used this for strawberry shortcake in place of the biscuit-type cake.

2 cups cake flour (regular will do)
1 1/4 cups sugar
2 1/2 teaspoons baking powder
1 teaspoon salt
1/3 cup soft shortening (or butter)
1 cup milk
1 teaspoon vanilla
1 egg (1/4 cup)

Mix all dry ingredients together well. Set aside.

Add butter, 2/3 cup milk, and vanilla. Beat at medium speed for two minutes. Add the rest of the milk and egg. Beat two more minutes. Add to dry mixture.

Bake at 350ยบ for 30 to 35 minutes depending on pan size. A 2-quart Pyrex baking pan works fine.
